The trio of chefs at Newland Restaurant combines their unique experiences to create a New American menu that makes even tomatoes seem like fancy cuisine. It doesn’t hurt they start with slices of rainbow heirloom tomatoes, or that they pair them with marigold pickled onions. But it’s the array of unexpected flavors that really makes this dish shine. They include rhubarb aqua chile, strawberry umeboshi, and huacatay.
And the rainbow tomatoes are just the beginning! For the main course, twirl a fork in the lobster spaghetti tossed with pepitas, radishes, oyster mushrooms, stinging nettles, and cured egg yolk. Or try the dry-aged duck breast with apricot sugo, caramelized peach, and bee pollen. The eight-day koji strip steak is another decadent option, this one complemented by fenugreek, asparagus, onion soubise, and bordelaise sauce.
